Recipes
LION'S MANE "STEAK"
Ingredients
1 large lion's mane mushroom, 3-4 tsp steak seasoning, olive oil, salted butter, rice
Preparation
- Cut the lion's mane into “steaks”: Place the mushroom on a cutting board stem-side down (like cauliflower). Slice from the center down, then cut each half into 4 cm thick "steaks". Depending on the size of the mushroom, you may get 3–6 pieces.
- Drizzle or brush the mushroom steaks with olive oil. Use just a thin layer of oil – this helps the seasoning stick.
- Season the mushroom steaks with steak seasoning. Use about ¼-½ teaspoon of seasoning per side.
- Serve with rice and a salad.
SHIITAKE SOUP
Ingredients
300 g shiitake mushrooms
12 dumplings
1 brown onion
4 garlic cloves
1 tbsp fresh ginger
1 tbsp sesame oil
1 liter vegetable broth
2 tbsp soy sauce
700 ml water
3 smaller bok choy
Chili (optional)
1 tbsp olive oil
Salt and black pepper
Green onions (for garnish)
Soy sauce and chili or sriracha sauce for garnish (optional)
Preparation
- Chop the onion into small cubes and fry in olive oil until translucent.
- Chop garlic and ginger into cubes, add to the pot, and brown for a few minutes.
- Pour in the vegetable broth and 700 ml of water. Add soy sauce and simmer covered on low heat for 15-20 minutes.
- Slice the shiitake mushrooms and add to the pot. Once they start to brown, add sesame oil, chili, and a pinch of salt and pepper. Fry for a few minutes.
- Cut off the bottom ends of the bok choy stalks and separate the leaves. Add to the pot along with the dumplings.
- Simmer for a few minutes until the dumplings are cooked and ready to serve. Serve in bowls, sprinkled with chopped green onions. You may also add soy sauce, chili, and sriracha.
